6 baking essentials recommended by pastry chef Natalie Sideserf
Have you ever wanted to make the cute cakes you see all over YouTube and TikTok? Well, thanks to the creations of pastry chef Natalie Sideserf, you can do just that!
We caught up with Sideserf to learn all about his background and how he ended up making real cakes that social media can’t get enough of.
“I studied art in college,” Sideserf explained when asked how he got started making cakes. “I was using traditional media as an illustration.”
Sideserf’s artistic background shines through in everything he creates. He made his first cake – a cow skull – in 2010 on a dare. He had a friend who watched all the baking shows of the early 2000s and wanted to see if Sideserf could create one of the beautiful works of art featured on the show.
Since then, Sideserf has made hundreds of cakes like spiders, pizzas, onions and hundreds of other realistic creatures and objects.
“It was really fun to use at the time, but I always found it more difficult to work with than the edible clay I work with now,” Sideserf told us when asked how she makes her cakes look so realistic.
Edible clay, based on molding-chocolate, is easy to work with and an inexpensive way to take your cakes to the next level. “It’s an all-ages product,” Sideserf explained in our interview. He has kids and adults alike using his YouTube tutorials to make realistic cakes.
Sideserf decided to release his own brand of edible clay because he gets so many requests every day. “Through my YouTube channel, I get a lot of people asking for it…This is the product I use for all my cakes, so it made sense to release it.”
Sideserf’s mission has always been to help others learn how to make real cakes. She has YouTube videos on everything from making a pancake that looks like a crabby patty to making a realistic pancake stack. Her recommendation for complete beginners looking to make their first real cake, was to start with her mac and cheese cake video.
6 must-have baking items recommended by Natalie
During our interview, we asked Natalie her top baking products she recommends for cake bakers. She gave us her top six baking essentials. Check them out:
Sideserf Studios edible clay is the most important part of all of Natalie’s cakes, so if you’re looking to make realistic (or cartoonish) cakes, edible clay is the way to go. It’s easy to mold and performs like regular clay, Sideserf explains. This makes it easier to work with than fondant, which also has a sweeter taste than chocolate-based edible clay.

Sculpting a cake is very similar to working with a clay sculpture, according to Sideserf. This is why you need your own set of carving tools when planning to make molded cakes.
“Some are made specifically for cake, but other people use the same tools they would use for regular recording,” Sideserf said in our interview. So, you can get a great package of cake-specific sculpting tools like these from Amazon, or, if you’re a crafter too, pick up some multipurpose clay sculpting tools at Michaels. Just make sure you clean all your tools before you start making cakes.
Cake painting brushes are also an essential tool to have if you want to enter the world of cake decorating. They help you create small details and add life to your cakes.
Natalie helpfully explained that wafer paper is just edible paper that you can use for all kinds of creations, like flowers, for example. Sideserf made a sushi cake recently with lots of wafer paper as part of the seafood cake.
Get creative with 25-packs of wafer paper from Amazon, or pick up 50-packs of wafer paper from Walmart.
To add color to your cakes or baked goods, you need food coloring gel or food coloring powder. Sideserf explained that gel or powder is a better option than liquid food coloring because it adds more color without using much.
You can get a pack of 12 different food coloring gels from Amazon, or you can get a pack of six primary food coloring powders from Amazon.

A non-stick baking mat helps your cakes or other baked goods slide seamlessly onto the pan once they’re out of the oven. Save yourself the trouble of ruining your hard work and invest in a basic set of three non-stick mats at Amazon.
“They’re making cupcakes that have dimensions too,” Sideserf said. This silicone cake baking mat from Walmart is an example of the mats he refers to. For advanced bakers who want to make perfect cakes, a special cake mat is good to have.

When asked about his favorite type of cake pans, Sideserf was quick to point to Fat Daddio’s pans. “These are the pans I always use, I’ve been using them for years,” he said. Fat Daddio’s pans come in all shapes and sizes.
You can find Fat Daddio’s classic round pan from Amazon. Amazon has Fat Daddio square pans and Fat Daddio springform pans for cheesecakes and pies.
